Cheesecake Ice Cream Clouds

Like cheesecake? Miss ice cream? What if you could have the two, in one?

Well, with this recipe, you can! Takes minutes to prepare, virtually carb-free, and absolutely delicious.


8 ounces cream cheese, softened
1/2 cup unsalted butter, softened
3/4 cup granular Splenda or stevia
1/2 teaspoon vanilla, lemon, coconut, or orange flavoring (feel free to experiment).


Combine all ingredients well with an electric mixer. Drop by bite-size spoonfuls onto a wax paper-lined sheet. Freeze for about an hour. Store in either the fridge or the freezer, and eat cold (or frozen).
