Guilt-Free Doughnut Holes

Dreaming of doughnuts — but can’t imagine them being a possibility on a low carb diet?

1 egg
1/4 cup butter, melted
2 tbsp granular Splenda or stevia
1 capful orange or almond extract (these seem to bring out the flavor best)
1.5 scoops whey protein powder (experiment with any flavor you like)
pinch of salt
2 tsp baking powder
1 tbsp granular Splenda or stevia mixed with cinnamon for topping
Vegetable oil for frying


Combine all dry ingredients together, and beat the egg with the melted butter. Gradually add the dry ingredients to the wet, whisking everything together well. Cover and let rest for five minutes or so, then come back to the mixture and whisk for another minute.

Add enough oil to a deep skillet to rise up about an inch from the bottom, and heat to about 360 F (if you have a thermometer and can check it, that’d be ideal; if not, just make sure it’s hot but not smoking).

Once oil has heated, use an ice cream scoop to drop the batter into the hot oil. Work in small batches to ensure that the donuts do not touch in the oil. The batter will be thin, so you’ll have to be careful not to crowd the pan.

Fry for about 10 seconds; once you see the bottoms get brown, flip donuts over carefully (the top will still be runny!). Once flipped over, cook for another few seconds, and transfer to a rack to cool and drain. Sprinkle with the sweetener/cinnamon mix, and enjoy!

Makes 8 doughnuts.

    Probably wont make these….. but cool recipe! I just don’t even like real doughnuts, and I am on a protein powder strike.

    BUT I was thinking– you could make chocolate doughnuts by adding a spoon full of cocoa!

    What is the measure-size of a “scoop” of whey protein. Is it a quarter-cup, 2 tablespoons, or what other measurement?
