Maple-Walnut Protein Cookies

These delicious cookies aren’t fat free, but they are extremely low in carbs and have good fats in them. Enjoy them as an after-dinner snack with no concern of fat gain!


1.5 cups Almond Flour
1 cup Vanilla Protein Powder
1/2 cup Butter
1/2 Light Cream Cheese
2 Whole Eggs
1.5 cups Granular Splenda or Stevia
Pinch of Cinnamon
1 capful of Maple Extract
1 capful of Walnut Extract
1 tsp Baking Soda
Pinch of Salt
1/4 cup chopped Walnuts


Preheat the oven at about 375 F.

Combine softened butter and cream cheese together in a bowl, and mix with an electric blender until it lightens and gets light/airy. Slowly add your sweetener, salt, baking soda, and the maple flavoring to the mix. Add the eggs one at a time, and blend until thoroughly combined.

At this point, slowly incorporate the dry mixture — the almond flour and protein powder. When the dry and wet ingredients are well combined, add the walnuts and incorporate them into the mixture manually. Spoon the batter onto a cookie sheet with a teaspoon to make mini cookies, and bake for 7 minutes, or until just starting to brown.

Allow to cool as they set, and enjoy! Makes 20 small cookies
