“Kill the Chill” Yam and Chicken Soup

This savory, delicious soup is easy to make, and the perfect meal for when there’s a chill in the air. It’s super high in protein, extremely low in fat, and provides just the right amount of complex carbs — along with a healthy serving a vitamins and antioxidants. Enjoy!

Ingredients

4 cups Chicken Broth
1 pound boneless, skinless Chicken Breast, diced
1 Onion, chopped
1 Yam, cubed
1/2 cup Celery, diced
1/2 cup Carrots, diced
1 teaspoon dried Savory Herb
1/4 teaspoon Salt
1 cup Peas (either fresh, or if using frozen, defrost)
1/2 teaspoon Black Pepper
1/4 pound Escarole, Mustard Greens, or Kale, stems removed

Directions

In a pot, combine the broth, onion, yam, celery, carrots, savory, and salt; bring to a boil. Once boiling, set the heat to simmer, and let cook for 25 minutes, stirring a few times to ensure even cooking.

Add the peas and pepper and continue to simmer for an additional 4-5 minutes. Add the greens, and cook for another 1-2 minutes.

Makes 4 servings.

    This would be great with fresh mushrooms! It would be YUM without mushrooms too! I used to LOVE chicken soup as a kid! Its weird how food can bring back such comforting memories.
